Absztrakt

Amióta az emberiség létezik, az étel mindig is jelentős szerepet játszott az emberek közötti kapcsolatokban (földrajzi felfedezések, gyarmatosítás, globalizáció). A nemzeti konyha maga is része a kultúrának (nemzeti identitás kifejeződése, nemzeti ételek, sajátos étkezési szokások stb.), de szoros kapcsolatban áll a történelemmel, a földrajzzal is, remek eszköz az egyedi kultúra, a kulturális örökség terjesztésére, amely nyelvi korlátok nélkül, emocionális kapcsolatot hozhat létre. Mivel az ételek a nemzet szimbólumaként is szolgálnak, és érzelmi kötődést is kialakítanak, komoly viták is kialakultak egyes kulináris fogások hovatartozásával kapcsolatban. A gasztronómiát különböző szinteken használja a diplomácia, hol kifejezetten a szűk politikus réteget célozza meg (kulináris diplomácia) vagy egy másik ország nyilvánosságát (gasztrodiplomácia) az országkép alakítása érdekében.
